Forced evaporators are used for high suspended solids liquid concentrations and for high refining or crystallization tendencies with increasing concentrations. In a forced circulation evaporator, the charge enters the shell from the bottom and is pumped up through a pipe using an axial or centrifugal pump. The speed of the food in the tube is maintained so that there is no scale formation in the tube.
